Preheat the oven to 220o C in the air.
Place a pan over high heat and add 2 tablespoons of olive oil.
Finely chop the onion and garlic and add them to the pan. Sauté for 1-2 minutes to caramelize.
Add the minced meat and sauté until golden.
Add the cumin, paprika, chili flakes, salt and pepper and mix.
Add the tomato paste and sauté. Add the tomato, rosemary, stir and cook over medium heat for 2-3 minutes to lose all the moisture.
Spread the Pita Bread on a baking sheet lined with parchment paper, spread the filling and the gruyere and bake for 5-10 minutes until the cheese melts and they turn golden.
Remove and serve with yogurt, paprika and parsley.
