Leek and cheese pie


For serving



Place a pan over high heat and add 4 tablespoons of olive oil.
Finely chop the leeks and add them to the pan. Add salt and pepper and sauté.
Finely chop the spring onions and sauté for 5-10 minutes to caramelize them.
Remove to a bowl and allow to cool thoroughly.
Finely chop the dill and mint and add them to the bowl along with the leeks.
Add the cream cheese, lemon zest and mix.
Place a pan or grill pan over high heat and add 1 teaspoon of olive oil.
Spread one pie on your work surface and put 1/5 of the filling on half of the pie. Spread with a spoon and fold to cover the filling.
Follow the same procedure for all the other ingredients.
Transfer in two batches to the pan and cook for 1 minute on each side to brown. Follow the same process for the other pies.
Serve with oregano.
